45 minutes
Vegan.

Ingredients:

200g long grain rice
100g emmeuital cheese
50g stoned green olives
150g frozen peas
2 hard boiled eggs
2 tomatoes
1 roasted red bell pepper
4 small gherkins
extra virgin oil
salt and pepper

Directions:

  1. Boil the rice in salted water,drain and rinse with cold water.
  2. Cook the peas, drain and put in a big bowl.
  3. Slice the gherkins, deseed the tomatoes and dice, skin the bell peppers and chop.
  4. Break the tuna with a fork, cut the cheese into small cubes.
  5. Add these ingredients to the bowl with the peas.
  6. Add rice, olives, season with salt and pepper and drizzle 3 tablespoons of olive oil.
  7. Mix the salad with a wooden spoon.
  8. Chill the rice salad for about 30 minutes before serving with wedges of hard-boiled eggs.
