Ingredients:
200g long grain rice
100g emmeuital cheese
50g stoned green olives
150g frozen peas
2 hard boiled eggs
2 tomatoes
1 roasted red bell pepper
4 small gherkins
extra virgin oil
salt and pepper
Directions:
- Boil the rice in salted water,drain and rinse with cold water.
- Cook the peas, drain and put in a big bowl.
- Slice the gherkins, deseed the tomatoes and dice, skin the bell peppers and chop.
- Break the tuna with a fork, cut the cheese into small cubes.
- Add these ingredients to the bowl with the peas.
- Add rice, olives, season with salt and pepper and drizzle 3 tablespoons of olive oil.
- Mix the salad with a wooden spoon.
- Chill the rice salad for about 30 minutes before serving with wedges of hard-boiled eggs.
