Ingredients:
800g veal cut in 1 big slice
150g ham thickly sliced
150g streaky bacon thickly sliced
spring of rosemary
spring of thyme
2 sage leaves
2 garlic cloves
1 carrot
1 celery stalk,
1 cup meat stock
½ glass of white wine
3 tablespoon olive oil
salt and pepper
Directions:
- Finely chop the herbs and the garlic.
- Put the slice of veal on a work surface, and flatten with a meat mallet.
- Sprinkle with salt and spread half the herbs on it.
- Cover with the ham, roll up and cover with the bacon slices.
- Tie up with string, heat oil in a saucepan and put in the roll, and see from all side until it starts browning.
- Add the chopped carrots, celery, the remaining herbs, and the wine, let it evaporate then lower the flame and cook for 15 minutes.
- Add the stock and season with stock and pepper.
- Simmer on low flame for about 1 hr, adding some more stock, if it dries up.
- Let the meat roll cool before slicing and serving with a fresh salad.
